Watercress Pancakes:

A Gluten Free Superfood Snack


  • 1 Large bunch of watercress
  • 1 Cup Bobs Red Mill all purpose baking flour20160520_200739
  • Add water until you have a pancake consistency appx a fourth of a cup
  • Dip Leaf bunches into batter
  • Heat a cast Iron pan and add Organic Coconut oil
  • Lightly brown both sides of pancake
  • Add your favorite sweet or savory toppings20160520_200710
    • Sesame oil and soy sauce for savory
    • Your favorite jam for sweet
